Not-So-Magical Cooking: Lemon Pepper Chicken
with Aeri Song
This recipe was a favorite of mine growing up and I was the one to improve upon it too! Sadly, due to lack of certain vital ingredients, I can’t make this recipe in Korea. However, I would still love to share this recipe with everyone! As I mentioned before, if you have any allergies but would love to try a recipe of mine, please don’t hesitate to message me! Now let’s get cooking!

Yield: Serves 6
Time: 30 Minutes
Ingredients
6 skinless, boneless chicken breast halves
Lemon Pepper Seasoning
Garlic Powder
Onion Powder
2 Carrots
125 mL Lemon Juice
*Lemon
Preparation
Step 1: Preheat the oven to 350 F (175 C) and while the oven is preheating, dice the carrots.
Step 2: Lightly grease a 9 x 13 inch (22.8 x 33 cm) baking dish and pour half of the lemon juice into the dish. Place the chicken into the dish then pour the rest of the lemon juice onto the chicken. Sprinkle the lemon pepper seasoning, garlic powder, and onion powder onto the chicken. You can use these as much as you think would be enough, but I would suggest about 2 tablespoons of lemon pepper, 1 tablespoon of garlic powder, and 1 tablespoon of onion powder. Bake in the oven for 15 minutes.
Step 3: Turn the chicken over and add the same amount of seasoning. Then add the carrots to the dish and cook for an additional 15 minutes, or until the chicken is cooked to the internal temperature of 165 F (74 C).
*Step 4 (Optional): Neatly slice a lemon and use the slices as a garnish then there you have it! Lemon Pepper Chicken~
